Ingredients
- 2 cups apple cider
- 3 tbsp granulated sugar
- 1 3/4 cups all-purpose flour
- 2 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 2 egg yolks, at room temperature
- 2 tsp vanilla
- 6 oz cream cheese, cold
- 2 tbsp apple cider reduction from above
- 1/4 cup granulated white sugar (for topping)
- 1/4 tsp ground cinnamon (for topping)
- 1/8 tsp ground nutmeg (for topping)
- pinch ground allspice (for topping)
- 1–2 tbsp salted butter, melted (for topping)
Instructions
- Prepare the apple cider reduction by boiling it until it thickens to about 1/2 cup.
- For the cheesecake filling, beat cold cream cheese with sugar until smooth and mix in cooled apple cider reduction.
- In another bowl, cream together softened butter and sugars until fluffy. Add egg yolks and vanilla, followed by the cooled cider reduction.
- In a separate bowl, whisk together flour and spices before gradually incorporating into the wet mixture until just combined.
- Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets, create an indentation for filling, add cheesecake mixture, and cover with additional dough if desired.
- Bake for about 11 minutes or until edges are golden.
