  • 1 cup fresh blackberries
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 4 oz brie cheese, thinly sliced
  • 2 tablespoons butter, softened

Instructions

  1. In a small saucepan over medium heat, combine 1 cup fresh blackberries, 1 tablespoon balsamic vinegar, 1 tablespoon honey, and a pinch of salt. Cook for about 5 minutes until the mixture thickens. Set aside to cool slightly.
  2. Heat a non-stick skillet over medium-low heat.
  3. Butter one side of each slice of bread with softened butter.
  4. Assemble sandwiches in the skillet: place two slices of bread buttered-side down, layer with brie cheese, spoon blackberry mixture over it, add more brie cheese, and top with remaining slices of bread (buttered-side up).
  5. Cook each side for 2-3 minutes until golden brown and the cheese melts.
