  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese mixture)
  • 1 large egg yolk (for cream cheese mixture)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until smooth. Beat in eggs, oil, and vanilla extract. Gradually combine the dry ingredients until just mixed.
  4. In another bowl, beat cream cheese until smooth. Add sugar, egg yolk, and vanilla extract; mix until combined.
  5. Fill muffin cups three-quarters full with pumpkin batter and top each with cream cheese mixture. Use a toothpick to swirl.
  6. Bake for 18–20 minutes or until a toothpick comes out clean with few crumbs attached. Allow cooling for about 10 minutes before serving.
