  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and prepare a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fill muffin cups about 3/4 full with batter.
  5. In another bowl, beat cream cheese until smooth; add sugar, egg yolk, and vanilla extract.
  6. Top each muffin with about 1 tablespoon of cream cheese mixture; use a toothpick to swirl gently.
  7. Bake for 18 to 20 minutes or until a toothpick comes out clean.
