  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 cans (15 oz) black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine lettuce, shredded

Instructions

  1. Prepare all ingredients by chopping vegetables and draining black beans.
  2. In a large skillet over medium heat, add olive oil and sauté onion until translucent. Stir in spices, tomatoes, jalapeños, black beans, and hot sauce; mix well.
  3. On a burrito-sized tortilla, layer black bean mixture, cheese, sour cream, romaine lettuce, avocado (if using), and a tostada.
  4. Top with a small fajita tortilla. Fold the burrito tortilla around the tostada to seal.
  5. In a pan sprayed with cooking oil over medium heat, cook the wrapped crunch until golden on both sides.
  6. Repeat until all wraps are made and serve warm.
