  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by lining it with parchment paper and spraying nonstick spray.
  2. In a bowl, mix flour, baking powder, salt, brown sugar, and sugar. Add cold butter cubes and blend until crumbly.
  3. Incorporate eggs and vanilla into the mixture until combined; press two-thirds into the prepared pan.
  4. For the filling, beat together mascarpone, cream cheese, caster sugar, corn starch, and eggs until smooth.
  5. Pour half the filling over the crust, sprinkle blueberries, add remaining filling, and top with leftover crumbs.
  6. Bake for 65–75 minutes until golden; check doneness with a toothpick.
  7. Cool completely before serving.
