- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2/3 cup cold butter (cubed)
- Grated zest from 1 lemon (optional)
- 1/3 cup light brown sugar
- 1/3 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 8 oz. mascarpone cheese
- 8 oz. cream cheese (softened)
- ½ cup + 2 tablespoons caster sugar
- 2 tablespoons corn starch
- 2 eggs
- 1 teaspoon vanilla
- 1 and 2/3 cups blueberries
- ½ cup powdered sugar
- 2–3 teaspoons milk
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by lining it with parchment paper and spraying nonstick spray.
- In a bowl, mix flour, baking powder, salt, brown sugar, and sugar. Add cold butter cubes and blend until crumbly.
- Incorporate eggs and vanilla into the mixture until combined; press two-thirds into the prepared pan.
- For the filling, beat together mascarpone, cream cheese, caster sugar, corn starch, and eggs until smooth.
- Pour half the filling over the crust, sprinkle blueberries, add remaining filling, and top with leftover crumbs.
- Bake for 65–75 minutes until golden; check doneness with a toothpick.
- Cool completely before serving.
