  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 3/4 cups cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • Filling: 3/4 cup light brown sugar (packed), 1 teaspoon cinnamon, 2 Tablespoon cake flour
  • Icing: 1 cup powdered sugar, 1/2 teaspoon cinnamon, 3 Tablespoons unsalted butter (melted and cooled), 2 1/2 Tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together room-temperature butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla; mix well.
  3. In a separate bowl, whisk together cake flour, baking soda, and salt. Gradually add to the wet mixture until combined. Chill the dough for one hour.
  4. Prepare the filling by mixing filling ingredients until smooth. Scoop out filling and form into balls.
  5. Roll chilled dough into balls, create wells to fill with the cinnamon mixture, then seal the dough around the filling.
  6. Place on prepared baking sheets and bake for 11–13 minutes until lightly golden around edges.
  7. Cool slightly before transferring to racks; drizzle with icing once cool.
