  • 1 lb thinly sliced beef steak (ribeye or sirloin)
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups milk
  • 1 cup shredded provolone cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions until al dente; drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Sauté the beef until browned; remove from skillet.
  3. In the same skillet, sauté onions and bell peppers until softened.
  4. In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk and stir until thickened; mix in provolone cheese and Italian seasoning.
  5. Combine cooked tortellini with beef and vegetables; pour the sauce over and toss gently to coat.
