- 1/4 cup granulated sugar
- 1 package ladyfingers
- Cocoa powder for dusting
- Dark chocolate, shaved or grated
Instructions
- In a mixing bowl, combine mascarpone cheese and heavy cream. Beat until smooth and fluffy.
- Add amaretto, cherry juice, and vanilla extract; mix until well combined.
- In another bowl, mix granulated sugar with cherry preserves, then fold into the mascarpone mixture along with chopped cherries.
- Dip ladyfingers quickly in a mixture of amaretto liqueur and cherry juice; layer them in a 9×13 inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture.
- Refrigerate for at least 4 hours or overnight before serving. Dust with cocoa powder and sprinkle with dark chocolate shavings before serving.
