Ingredients
- 2 slices of sourdough or artisan bread
- 1/2 ripe avocado, mashed
- 1/2 cup cooked shredded chicken
- 2 slices of cheddar or Monterey Jack cheese
- 1 tbsp mayonnaise (optional)
- 1 tsp lemon juice
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- In a small bowl, mash the avocado with lemon juice and season with salt and pepper.
- Spread mayonnaise on one side of each slice of bread. On the other side of one slice, spread the avocado mixture.
- Layer shredded chicken and cheese on top, then cover with the second slice of bread (mayo side out).
- Heat a skillet over medium heat and melt butter. Grill the sandwich for 3–4 minutes on each side until golden brown and cheese is melted.
- Slice in half and serve hot.
