  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream cubed cold butter and granulated sugar until smooth; add eggs and vanilla extract.
  5. Gradually incorporate dry ingredients into the wet mixture until combined.
  6. Roll out dough into a rectangle; spread the cinnamon sugar filling evenly across it.
  7. Roll up tightly and slice into 10–12 equal pieces.
  8. Bake for 9–11 minutes until lightly golden; cool before frosting.
