  • 1 cup finely shredded zucchini
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for cinnamon swirl)
  • 1 tablespoon cinnamon (for cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan lined with parchment paper.
  2. In a large bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until smooth.
  3. In another bowl, mix flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add the dry ingredients to the wet mixture until just combined.
  4. For the cinnamon swirl, mix together sugar and cinnamon in a small bowl.
  5. Pour half of the batter into the prepared pan, sprinkle half of the cinnamon sugar mixture on top. Add remaining batter and top with the rest of the cinnamon mixture. Use a knife to create swirls.
  6. Bake for 60-65 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10-15 minutes before transferring to a wire rack.
