  • 1 cup corn flakes
  • 1 cup chopped toasted pecans
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant; let cool.
  2. In a large mixing bowl or stand mixer, cream together softened butter, white sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time along with the vanilla extract; mix until fully incorporated.
  4. In another bowl, combine flour, salt, baking powder, and baking soda; gradually stir into wet ingredients until just combined.
  5. Gently fold in oats, corn flakes, toasted pecans, and coconut.
  6. Stir in peanut butter chips and chocolate chips until evenly distributed.
  7. Chill dough for at least one hour (or up to 24 hours) before baking.
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop about 1/4 cup of dough for each cookie onto the prepared sheets, spacing them two inches apart.
  10. Bake for 12–14 minutes or until golden around the edges but still slightly shiny in the middle.
  11. Let cookies cool before enjoying.
