  • 1 tbsp oil (vegetable or coconut)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Heat oil in a Dutch oven over medium heat. Sauté onion until translucent. Add garlic and ginger; cook until fragrant.
  2. Add beef chuck; season with salt and pepper. Brown on all sides for about 5-7 minutes.
  3. Stir in red curry paste, cumin, turmeric, and chili flakes; cook for 2 minutes.
  4. Pour in coconut milk and beef broth; mix well and bring to a simmer.
  5. Cover and reduce heat to low; let simmer for 2-3 hours until beef is tender.
  6. Stir in lime juice before serving hot with garlic naan and fries.
