Ingredients

  • 3 lbs. boneless, skinless chicken thighs
  • 2 cups chicken stock
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 bell pepper, sliced
  • 2 potatoes, diced
  • 1 scotch bonnet pepper or 1/2 teaspoon chili flakes (for milder spice)
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Marinate chicken with curry powder, garlic powder, smoked paprika, salt, and pepper for at least 30 minutes.
  2. In a large skillet or Dutch oven, heat olive oil over medium heat. Sauté onion, bell pepper, and carrot until softened.
  3. Add marinated chicken and brown on all sides. Stir in potatoes and your choice of heat (scotch bonnet or chili flakes).
  4. Pour in chicken stock and coconut milk; bring to a gentle simmer. Cover and cook for about 20 minutes until chicken is tender.
  5. Adjust seasoning if needed and serve hot over rice or with naan.
