Ingredients
- 2 tbsp Olive oil
- 1/2 medium Onion (diced)
- 2 medium Zucchini (sliced thinly)
- 2 tsp Dried basil
- 4 cloves Garlic (minced)
- 7 large Eggs
- 1/3 cup Heavy cream (or half and half)
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
- 1/3 cup Cheddar cheese
- 1/3 cup Mozzarella cheese
Instructions
- Preheat your oven to 350°F (177°C).
- In a skillet over medium heat, sauté diced onions in olive oil until translucent (about 5 minutes).
- Add thinly sliced zucchini and dried basil; cook for another 5 minutes until soft.
- Create a well in the skillet and add minced garlic; sauté until fragrant (about 1 minute).
- Transfer half the zucchini mixture to a pie pan; sprinkle with half the cheeses. Layer with remaining zucchini and top with remaining cheeses.
- In a bowl, whisk together eggs, heavy cream, salt, and pepper until smooth. Pour over the layered vegetables.
- Bake for 30-35 minutes until set and lightly golden.
