Description

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/3 cup tomato paste
  • 1 cup low-sodium chicken stock
  • 1 (15-ounce) can diced tomatoes
  • 1 tablespoon sugar
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1/3 cup heavy cream

Instructions

  1. In a medium pot, heat the olive oil over medium-high heat. Add the diced onion and minced garlic, cooking for about 4-5 minutes until soft and translucent.
  2. Stir in the tomato paste and cook for an additional minute.
  3. Pour in the chicken stock and diced tomatoes. Add sugar, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce to a simmer for 15-20 minutes until thickened.
  4. Finally, stir in the heavy cream and cook for another 2 minutes until well combined.
  5. Serve over prepared ravioli or your favorite pasta.
