- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1/3 cup tomato paste
- 1 cup low-sodium chicken stock
- 1 (15-ounce) can diced tomatoes
- 1 tablespoon sugar
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt
- ¼ teaspoon ground black pepper
- 1/3 cup heavy cream
Instructions
- In a medium pot, heat the olive oil over medium-high heat. Add the diced onion and minced garlic, cooking for about 4-5 minutes until soft and translucent.
- Stir in the tomato paste and cook for an additional minute.
- Pour in the chicken stock and diced tomatoes. Add sugar, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce to a simmer for 15-20 minutes until thickened.
- Finally, stir in the heavy cream and cook for another 2 minutes until well combined.
