Ingredients
- 8 chicken drumsticks
- 3 tbsp olive oil (divided)
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- 600 g potatoes, cubed
- 3 carrots, chopped
- 1 red bell pepper, chopped
Instructions
- Preheat your oven to 200C (390F).
- In a mixing bowl, combine chicken drumsticks with 2 tbsp olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss to coat.
- In another bowl, mix cubed potatoes, carrots, and bell pepper with remaining olive oil, salt, and pepper.
- Arrange seasoned vegetables on a baking tray; nestle marinated chicken among them.
- Roast for 40-45 minutes or until chicken reaches golden brown and internal temperature is 75C (165F).
- Garnish with fresh parsley before serving.
