  • 8 chicken drumsticks
  • 3 tbsp olive oil (divided)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine chicken drumsticks with 2 tbsp olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss to coat.
  3. In another bowl, mix cubed potatoes, carrots, and bell pepper with remaining olive oil, salt, and pepper.
  4. Arrange seasoned vegetables on a baking tray; nestle marinated chicken among them.
  5. Roast for 40-45 minutes or until chicken reaches golden brown and internal temperature is 75C (165F).
  6. Garnish with fresh parsley before serving.
