  • ½ cup whole milk

  • ½ cup powdered sugar
  • 12 tbsp fresh squeezed lemon juice (to taste)
  • ½ cup powdered sugar
  • 12 tbsp milk (to taste)
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a microwave-safe bowl, melt the butter with molasses and let cool slightly.
  3. Whisk together flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt in a separate bowl.
  4. Combine the brown sugar, sour cream, milk, and egg into the cooled molasses mixture; mix well.
  5. Gradually add the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Fill muffin cups generously with batter and sprinkle with coarse sugar if desired.
  7. Bake at 425°F for 5 minutes; then lower the temperature to 350°F (without opening the door) and bake for another 11-14 minutes until done.
  8. Let cool before glazing with lemon glaze made from powdered sugar and lemon juice.
