  • 45 ripe peaches, peeled and diced
  • 1/3 cup cane sugar
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten-free flour blend
  • 1 cup gluten-free quick oats
  • 6 tablespoons solid coconut oil
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix diced peaches, cane sugar, cornstarch, cinnamon, and orange juice. Set aside.
  3. In another bowl, combine flour, oats, brown sugar, cane sugar, and sea salt. Add solid coconut oil, maple syrup, and coconut milk; mix until crumbly.
  4. Press two-thirds of the oat mixture into the pan, layer with peach filling, then sprinkle remaining oat mixture on top.
  5. Bake for 40-45 minutes until bubbly and golden brown. Cool before slicing.
