  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 large sweet potatoes
  • Olive oil
  • Lemon juice
  • Dijon mustard
  • Garlic (fresh)
  • Dried oregano
  • Smoked paprika
  • Salt and black pepper
  • Optional toppings: avocado, mixed greens, tahini dressing

Instructions

  1. Marinate the chicken in olive oil, lemon juice, Dijon mustard, garlic, oregano, smoked paprika, salt, and pepper for at least 30 minutes in the refrigerator.
  2. Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and cayenne pepper; roast for 25–30 minutes until golden.
  3. Grill marinated chicken on medium-high heat for 6–7 minutes per side or until cooked through (internal temperature of 165°F).
  4. Assemble bowls starting with quinoa or rice (if using), then add roasted sweet potatoes and grilled chicken slices. Top with greens and optional ingredients as desired.
  5. Drizzle with tahini dressing before serving.
