  • 2 cups baby potatoes, halved

  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 cup shredded mozzarella or cheese blend
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper in a mixing bowl. Spread them on a baking sheet in a single layer.
  2. Roast potatoes for 25-30 minutes until golden brown. Sprinkle with fresh parsley before serving.
  3. On another baking sheet, place trimmed asparagus, drizzle with olive oil, season with salt and pepper, and top with shredded cheese. Bake for the final 10 minutes alongside the potatoes until bubbly.
  4. Season salmon fillets with paprika, garlic powder, salt, and pepper. Grill each side over medium-high heat for about 4-5 minutes until cooked through.
  5. Plate the grilled salmon next to roasted garlic potatoes and cheesy asparagus. Serve hot.
