  • 1/4 cup brown sugar (for crumb topping)
  • 1/4 teaspoon cinnamon (for crumb topping)
  • 1/4 teaspoon salt (for crumb topping)
  • 1/4 cup unsalted butter, melted (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the crust: In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Press into the prepared pan and bake for 15-18 minutes until lightly golden.
  3. For the peach filling: In another bowl, mix sliced peaches with sugar, flour, lemon juice, and vanilla extract.
  4. For the crumb topping: Combine remaining flour, sugars, cinnamon, and salt in a separate bowl; stir in melted butter until crumbs form.
