  • 18 oz fresh blackberries
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice (to replace alcohol)
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1/4 cup raw or turbinado sugar (for sprinkling)

Instructions

  1. Combine flour, sugar, and salt in a stand mixer. Add cold butter until crumbly. Gradually mix in ice water until clumps form.
  2. Chill the dough for at least one hour. Prepare apple filling by cooking diced apples with butter, fruit juice, vanilla, cinnamon, and brown sugar until syrupy.
  3. Roast blackberries with sugar and vanilla until thickened.
  4. Roll out the chilled dough and cut into pumpkin shapes using a cookie cutter.
  5. Assemble hand pies by placing filling in the center of cutouts, sealing edges, brushing with egg wash, and baking until golden.
