  • 2 large eggs
  • 1/4 cup crumbled feta cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 1 teaspoon salt
  • 2 cloves garlic (minced)
  • 2 scallions (finely chopped)
  • 1/4 cup parsley (finely chopped), or herbs of choice
  • 1/4 tsp each ground black pepper, chili powder, garlic powder (to taste)
  • 1 tablespoon oil (for frying)

Instructions

  1. In a mixing bowl, combine shredded zucchini with salt and let it sit for 10 minutes. Drain excess water.
  2. In another bowl, whisk together eggs and add the drained zucchini, feta, minced garlic, scallions, and almond flour until combined.
  3. For frying: Preheat a pan with oil over medium-high heat. Scoop batter into the pan and cook for 2-3 minutes on each side until golden brown.
  4. For baking: Preheat the oven to 400°F (200°C), scoop batter onto parchment-lined baking sheets, flatten slightly, and bake for 20 minutes, flipping halfway.
  5. For air frying: Preheat air fryer to 375°F (190°C). Place fritters in a single layer and cook for about 8 minutes, flipping halfway.
