- 1/2 cup almond flour
- 1 teaspoon salt
- 2 cloves garlic (minced)
- 2 scallions (finely chopped)
- 1/4 cup parsley (finely chopped), or herbs of choice
- 1/4 tsp each ground black pepper, chili powder, garlic powder (to taste)
- 1 tablespoon oil (for frying)
Instructions
- In a mixing bowl, combine shredded zucchini with salt and let it sit for 10 minutes. Drain excess water.
- In another bowl, whisk together eggs and add the drained zucchini, feta, minced garlic, scallions, and almond flour until combined.
- For frying: Preheat a pan with oil over medium-high heat. Scoop batter into the pan and cook for 2-3 minutes on each side until golden brown.
- For baking: Preheat the oven to 400°F (200°C), scoop batter onto parchment-lined baking sheets, flatten slightly, and bake for 20 minutes, flipping halfway.
- For air frying: Preheat air fryer to 375°F (190°C). Place fritters in a single layer and cook for about 8 minutes, flipping halfway.
