Ingredients
- 4 cups shredded zucchini (about 4 medium zucchinis)
- 1/4 teaspoon salt
- 1/2 cup diced yellow onion
- 2 tablespoons minced garlic
- 2 beaten eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 3/4 cup grated Parmesan cheese (divided)
- 1/2 cup crushed beef rinds or Parmesan crisps
- 3 tablespoons butter
Instructions
- Preheat the oven to 375°F and spray an 8” x 8” baking dish with non-stick cooking spray.
- Drain half of the shredded zucchini using cheesecloth or a kitchen towel to remove excess moisture.
- In a mixing bowl, combine drained zucchini with onion, garlic, beaten eggs, mozzarella, cheddar, and half of the Parmesan cheese.
- Pour the mixture into the prepared baking dish and bake for 20 minutes.
- While baking, melt butter and mix with crushed beef rinds and remaining Parmesan.
- After 20 minutes, add the topping mixture over the casserole and return it to the oven for an additional 5-8 minutes until browned.
- Season with salt and pepper before serving hot.
