Description

Ingredients

  • 4 cups shredded zucchini (about 4 medium zucchinis)
  • 1/4 teaspoon salt
  • 1/2 cup diced yellow onion
  • 2 tablespoons minced garlic
  • 2 beaten eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup grated Parmesan cheese (divided)
  • 1/2 cup crushed beef rinds or Parmesan crisps
  • 3 tablespoons butter

Instructions

  1. Preheat the oven to 375°F and spray an 8” x 8” baking dish with non-stick cooking spray.
  2. Drain half of the shredded zucchini using cheesecloth or a kitchen towel to remove excess moisture.
  3. In a mixing bowl, combine drained zucchini with onion, garlic, beaten eggs, mozzarella, cheddar, and half of the Parmesan cheese.
  4. Pour the mixture into the prepared baking dish and bake for 20 minutes.
  5. While baking, melt butter and mix with crushed beef rinds and remaining Parmesan.
  6. After 20 minutes, add the topping mixture over the casserole and return it to the oven for an additional 5-8 minutes until browned.
  7. Season with salt and pepper before serving hot.
