  • 1 white fish fillet (cod, tilapia, or haddock)
  • Salt & black pepper
  • Juice of 1 lemon
  • 1 carrot, peeled and cut into sticks
  • Zucchini, sliced into rounds
  • 2 garlic cloves
  • 1 tbsp butter (or olive oil)
  • 1 tbsp fresh parsley or dill

Instructions

  1. Heat half the butter in a skillet over medium heat. Add garlic, carrots, and zucchini; sauté for 6–8 minutes until tender. Season with salt and pepper; set aside.
  2. Season the fish fillet with salt and pepper. In the same skillet, melt the remaining butter and sear the fish over medium-high heat for 3–4 minutes per side until golden and flaky. Add lemon juice during the last 30 seconds.
  3. Plate the fish with sautéed veggies; drizzle any pan sauce over the top and garnish with fresh herbs.
  4. Serve hot alongside rice or potatoes for a complete meal.
