  • 3 cups frozen cauliflower rice
  • 1 (10 oz) can Rotel diced tomatoes
  • 1 oz packet taco seasoning
  • 8 oz shredded Mexican cheese blend

Instructions

  1. Cook the chicken using your preferred method (poaching recommended). Chop or shred once cooked.
  2. Preheat your oven to 350ºF (175ºC).
  3. In a frying pan over medium-high heat, add oil and sauté frozen cauliflower rice until golden brown.
