Description

Low Carb Greek Chicken Bowls are a delightful fusion of Mediterranean flavors that are both healthy and satisfying. These vibrant bowls feature succulent marinated chicken, a refreshing cucumber-tomato salad, creamy tzatziki, and tangy feta cheese, making them perfect for any occasion—from casual weeknight dinners to impressive dinner parties.


Ingredients

  • Chicken breasts
  • Nonfat plain Greek yogurt
  • Lemon juice
  • Garlic
  • Olive oil
  • Cucumber
  • Cherry tomatoes
  • Red onion
  • Dill
  • Feta cheese

Instructions

  1. Marinate cubed chicken in a mixture of Greek yogurt, lemon juice, garlic, oregano, salt, and pepper in a Ziploc bag for at least 20 minutes.
  2. Cook the marinated chicken in a skillet over medium-high heat or in an air fryer until fully cooked (165°F).
  3. In a mixing bowl, toss together sliced cucumber, cherry tomatoes, red onion with olive oil and lemon juice.
  4. Whisk together tzatziki ingredients (Greek yogurt, lemon juice, garlic, dill) until smooth.
  5. Assemble the bowls by placing chicken on top of the cucumber salad and drizzling with tzatziki; sprinkle with feta cheese.
