  • 2 cups mushrooms (sliced)
  • ¾ cup onion (chopped)
  • 2 cups marinara sauce
  • 1 ½ cups shredded cheese (mozzarella or your choice)
  • 2 large eggs
  • Italian seasoning (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly coat a 13×9 inch baking pan with cooking spray.
  3. In a mixing bowl, combine shredded zucchini, eggs, parmesan cheese, salt; mix until well combined.
  4. In another bowl, sauté ground meat with onions until browned; add mushrooms and sauce; mix well.
  5. Layer half the zucchini mixture in the pan, followed by the meat mixture; top with remaining zucchini mix and cheese.
  6. Bake for 30-40 minutes until bubbly and golden.
