  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a mixing bowl, combine chicken pieces, sliced zucchini, halved cherry tomatoes, onion slices, and minced garlic. Drizzle with olive oil and seasonings; mix well.
  4. Spread the mixture evenly in the baking dish.
  5. Top with shredded mozzarella and grated Parmesan cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10–15 minutes until cheese is golden brown and chicken reaches an internal temperature of 165°F (75°C).
