Ingredients
- 1 (15 ounce) can chickpeas (rinsed and drained)
- 2 mini cucumbers (chopped)
- 1 tablespoon red onion (chopped)
- 1 tablespoon fresh oregano (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1/2 red bell pepper (chopped)
- 1 cup little tomatoes (halved)
- 1/2 cup Kalamata olives
- 3.5 ounces feta cheese
- 2 tablespoons olive oil
- 1/2 tablespoon lemon juice
- 1 clove garlic (minced)
- Salt & pepper to taste
Instructions
- Drain and rinse the chickpeas under cold water and add them to a large salad bowl.
- Chop the mini cucumbers, red onion, oregano, parsley, red bell pepper, and little tomatoes into bite-sized pieces and add them to the bowl.
- Gently mix in the Kalamata olives and crumble the feta cheese on top.
- In a separate bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper; pour over the salad.
- Toss gently to combine all ingredients and season to taste before serving.
