- 1 cup chopped romaine lettuce
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1 avocado, sliced
- 1 cup kalamata olives
- 1 cup crumbled feta cheese
- Grilled chicken breast, sliced
- 1 soft-boiled egg, halved
- 1 tbsp olive oil
- 1 tsp lemon juice or apple cider vinegar
- Salt and pepper to taste
Instructions
- Boil the egg in water for 7-8 minutes for a soft center. Cool it under cold water, peel, and halve.
- Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 4-5 minutes on each side until fully cooked. Slice into strips.
- In a mixing bowl, layer romaine lettuce, cucumber, cherry tomatoes, kalamata olives, and feta cheese.
- Add sliced chicken breast and avocado to the salad base along with the halved egg. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.
