  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • Salt to taste
  • 1 lb bowtie pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • 1/4 cup milk
  • Optional: pinch of red pepper flakes

Instructions

  1. In a large bowl, season cubed chicken with olive oil, Cajun seasoning, smoked paprika, salt, and black pepper.
  2. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Cook the seasoned chicken until golden brown (6-8 minutes). Remove and set aside.
  3. Boil water in a pot; cook bowtie pasta according to package directions until al dente. Drain and set aside.
  4. In the same skillet, melt remaining 2 tablespoons of butter and sauté minced garlic until fragrant (about 1 minute). Whisk together flour and milk; add to the skillet while whisking until thickened (about 1-2 minutes).
  5. Gradually add chicken broth and heavy cream while whisking to prevent lumps; bring to a simmer and stir in cream cheese, 3/4 cup mozzarella cheese, and Parmesan cheese until melted and smooth.
  6. Add cooked pasta into the cheese sauce and toss to coat evenly. Gently fold in cooked chicken until well mixed.
  7. Transfer to a large serving dish and top with remaining mozzarella cheese. Broil on low heat for 2-3 minutes or until cheese is melted and bubbly.
