Ingredients

  • 1 cup Sugar
  • 1/2 cup Unsalted Butter
  • 1/4 cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 1/2 cup Pecans, chopped
  • 1/2 cup Dried Cranberries
  • 2 cups Rolled Oats

Instructions

  1. Chop the pecans and measure out the dried cranberries and rolled oats.
  2. In a medium saucepan, combine sugar, unsalted butter, and heavy cream over medium heat, stirring until melted and gently boiling.
  3. Continue stirring for 2-3 minutes until the mixture thickens slightly and turns light caramel in color.
  4. Remove from heat and stir in vanilla extract and salt.
  5. Mix in chopped pecans, dried cranberries, and rolled oats until well combined.
  6. Line a baking sheet with parchment paper and drop tablespoon-sized mounds of the mixture onto it.
  7. Allow cookies to cool at room temperature for 30-40 minutes or place in the fridge for quicker setting.
