Ingredients
- 1/2 cup unsalted butter (cut into about 8 pieces)
- 4 ounces dark chocolate (finely chopped)
- 1 cup granulated sugar
- 2 large eggs (whisked)
- 1/2 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1/4 teaspoon salt
- 1 cup pumpkin puree (NOT the entire can)
- 1 cup evaporated milk (NOT the entire can)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ginger powder
- 1/8 teaspoon ground cloves
- 1 tablespoon cornstarch (AKA cornflour)
Instructions
- Preheat your oven to 325°F (170°C). Line an 8×8 inch baking pan with aluminum foil and lightly grease it.
- In a saucepan over low heat, melt unsalted butter and dark chocolate until smooth. Remove from heat and let cool slightly.
- In a mixing bowl, combine granulated sugar and whisked eggs. Stir in the cooled chocolate mixture until well combined. Sift in flour, cocoa powder, and salt; fold gently.
- Pour brownie batter into the prepared pan and bake for 20 minutes.
- While baking, whisk together pumpkin puree, evaporated milk, egg, vanilla extract, brown sugar, spices, and cornstarch in another bowl.
- Once brownie layer is set but soft in the center, pour pumpkin mixture over it and bake for an additional 30 minutes until filling is set.
- Allow to cool completely before lifting out using foil edges. Cut into squares and serve.
