  • 1/2 cup unsalted butter (cut into about 8 pieces)
  • 4 ounces dark chocolate (finely chopped)
  • 1 cup granulated sugar
  • 2 large eggs (whisked)
  • 1/2 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree (NOT the entire can)
  • 1 cup evaporated milk (NOT the entire can)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon ground cloves
  • 1 tablespoon cornstarch (AKA cornflour)

Instructions

  1. Preheat your oven to 325°F (170°C). Line an 8×8 inch baking pan with aluminum foil and lightly grease it.
  2. In a saucepan over low heat, melt unsalted butter and dark chocolate until smooth. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine granulated sugar and whisked eggs. Stir in the cooled chocolate mixture until well combined. Sift in flour, cocoa powder, and salt; fold gently.
  4. Pour brownie batter into the prepared pan and bake for 20 minutes.
  5. While baking, whisk together pumpkin puree, evaporated milk, egg, vanilla extract, brown sugar, spices, and cornstarch in another bowl.
  6. Once brownie layer is set but soft in the center, pour pumpkin mixture over it and bake for an additional 30 minutes until filling is set.
  7. Allow to cool completely before lifting out using foil edges. Cut into squares and serve.
