  • 1 cup canned pumpkin puree
  • ½ cup white granulated sugar
  • ½ cup light brown sugar (packed)
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a mini muffin tin by greasing it or lining it with paper liners.
  2. In one bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In another bowl, mix the eggs, pumpkin puree, both sugars, and vegetable oil until just blended.
  4. Gently fold the wet mixture into the dry ingredients until just combined. Fold in the chocolate chips evenly.
  5. Scoop the batter into the prepared muffin tin and bake for about 16 minutes or until a toothpick inserted comes out clean.
  6. Allow cooling for about three minutes before transferring to a wire rack.
