Instructions
- Preheat the oven to 350°F (175°C) and prepare a mini muffin tin by greasing it or lining it with paper liners.
- In one bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
- In another bowl, mix the eggs, pumpkin puree, both sugars, and vegetable oil until just blended.
- Gently fold the wet mixture into the dry ingredients until just combined. Fold in the chocolate chips evenly.
- Scoop the batter into the prepared muffin tin and bake for about 16 minutes or until a toothpick inserted comes out clean.
- Allow cooling for about three minutes before transferring to a wire rack.
