  • ¼ cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a stand mixer, beat room-temperature butter with granulated and brown sugar until light and fluffy. Add pumpkin puree, egg, and vanilla; mix until combined.
  4. Gradually incorporate the dry ingredients until just combined; the dough will be sticky.
  5. Scoop tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for 13 to 15 minutes until edges are set but centers remain soft. Let cool on the pan briefly before transferring to a wire rack.
  7. For frosting, beat softened cream cheese and butter until smooth; mix in vanilla and sifted confectioners' sugar until well combined.
