  • Mini pumpkins or ramekins
  • Heavy cream (2 cups)
  • Granulated sugar (1/3 cup plus extra for topping)
  • Large egg yolks (4)
  • Vanilla extract (1 tsp)
  • Pumpkin puree (1 cup)
  • Ground cinnamon (1/2 tsp)
  • Ground ginger (1/2 tsp)
  • Salt (1/4 tsp)

Instructions

  1. Preheat your oven to 325°F (160°C). If using mini pumpkins, cut off the tops and scoop out the seeds.
  2. In a mixing bowl, whisk together heavy cream and sugar. Gradually add egg yolks, whisking until smooth, then stir in pumpkin puree, vanilla extract, spices, and salt.
  3. Pour the mixture into prepared ramekins or mini pumpkins, leaving space for expansion.
  4. Place filled containers in a baking dish and fill with hot water halfway up the sides. Bake for about 30 minutes until slightly wobbly in the center.
  5. Cool completely on a wire rack, then refrigerate for at least two hours. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
