  • 1 large egg
  • 8 ounces unsalted butter (divided)
  • 1 1/2 cup pumpkin puree
  • 3 large eggs
  • 8 ounces cream cheese (softened)
  • 1 tbsp vanilla extract
  • 1 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 tsp ground ginger

Instructions

  1. Preheat your oven to 350°F and prepare your pan by lining it with parchment paper.
  2. In an electric mixer, combine cake mix, melted butter (1/2 cup), and one egg until smooth. Press into the bottom of the prepared pan.
  3. In another bowl, beat together pumpkin puree, cream cheese, remaining eggs, brown sugar, melted butter (remaining), vanilla extract, cinnamon, ginger, and nutmeg until well blended.
  4. Pour the pumpkin filling over the cake base evenly.
  5. Bake for 40 to 50 minutes until golden brown on top but still slightly jiggly in the center.
  6. Let cool for at least 10 minutes before slicing.
