  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
  2. In a bowl, mix flour, oats, brown sugar, baking soda, and salt; stir in melted butter until crumbly.
  3. Press half the mixture into the baking dish as the base layer.
  4. In another bowl, whisk pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth; pour over the base layer.
  5. Sprinkle remaining crumble on top and add walnuts if desired.
  6. Bake for 30–35 minutes until golden brown; cool completely before slicing.
