  • 6 8-inch tortillas
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup butter (melted)
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 Tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Chopped pecans for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Use a cookie cutter to cut rounds from tortillas, then mix sugar and cinnamon on a plate.
  3. Poke holes in the tortillas, brush with melted butter, and coat in cinnamon-sugar.
  4. Place tortilla rounds between muffin cups upside down and bake for about 10 minutes until golden brown.
  5. Prepare whipped cream by beating all ingredients until stiff peaks form.
  6. Mix cream cheese with powdered sugar, then add pumpkin puree, vanilla extract, and spice until smooth.
  7. Fill cooled taco shells with pumpkin mixture, top with whipped cream and desired garnishes.
