- 2 cups cherries (washed, pitted, halved)
- 1 1/3 cup granulated sugar
- 2 large eggs
- 1 egg yolk
- 5 tbsp unsalted butter (melted)
- 1/3 cup canola or vegetable oil
- 1 tsp pure vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 tbsp cornstarch
- 1 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper. Spread halved cherries and sprinkle with sugar. Roast for about 10 minutes until softened.
- Lower the oven temperature to 325°F. Prepare an 8×8 inch baking pan with non-stick spray and parchment paper.
- In one bowl, sift flour, cocoa powder, cornstarch, and salt together. In another bowl, beat sugar, eggs, and egg yolk until fluffy.
- Mix melted butter, oil, and vanilla into the egg mixture. Gently fold in dry ingredients until just combined.
- Add half of the roasted cherries and chocolate chips to the batter; mix until evenly distributed.
- Pour batter into the prepared pan and bake for about 40-50 minutes until edges are set but center is slightly underbaked.
- Allow cooling before slicing into squares and serve with remaining roasted cherries on top.
