  • 2 cups cherries (washed, pitted, halved)
  • 1 1/3 cup granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tbsp unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 1 tsp pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. Spread halved cherries and sprinkle with sugar. Roast for about 10 minutes until softened.
  2. Lower the oven temperature to 325°F. Prepare an 8×8 inch baking pan with non-stick spray and parchment paper.
  3. In one bowl, sift flour, cocoa powder, cornstarch, and salt together. In another bowl, beat sugar, eggs, and egg yolk until fluffy.
  4. Mix melted butter, oil, and vanilla into the egg mixture. Gently fold in dry ingredients until just combined.
  5. Add half of the roasted cherries and chocolate chips to the batter; mix until evenly distributed.
  6. Pour batter into the prepared pan and bake for about 40-50 minutes until edges are set but center is slightly underbaked.
  7. Allow cooling before slicing into squares and serve with remaining roasted cherries on top.
