  • 1 tbsp olive oil
  • 3 tbsps butter (divided)
  • 2 small zucchinis (thinly sliced)
  • 1 small yellow onion (finely diced)
  • 1 lb small button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • Salt and pepper (to taste)
  • ¼ cup vegetable broth
  • Fresh herbs (for flavor)

Instructions

  1. Heat olive oil and ½ tbsp butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and sauté for 3-4 minutes until tender. Remove from skillet.
  3. In the same skillet, melt remaining butter; add onions and cook until softened.
  4. Stir in mushrooms and cook until browned.
  5. Add garlic and herbs; cook for about 20 seconds before returning zucchini to the skillet.
  6. Stir in vegetable broth; cook for an additional 2 minutes.
  7. Serve garnished with chopped parsley and grated parmesan.
