  • 3 pounds beef chuck roast (sliced thin)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 15 ounces canned light red kidney beans (drained)
  • 15 ounces canned dark red kidney beans (drained)
  • 8 ounces canned tomato sauce
  • 15 ounces canned fire roasted diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large dutch oven, heat olive oil over medium-high heat. Brown the beef and sauté the onion until tender; add garlic and cook for another minute.
  2. Drain excess fat, return mixture to the pot, and add beans, tomato sauce, diced tomatoes, broth, chili powder, cumin, salt, and pepper. Mix well.
  3. Simmer over medium heat before transferring everything into your slow cooker. Cook on low for 4-6 hours until tender.
  4. Serve in bowls topped with your choice of shredded cheese, sour cream, or cilantro.
