Ingredients
- 4 Persian cucumbers (or 1 English cucumber)
- 1 medium ripe avocado
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pistachios
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh chives
- 2–3 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 2 cloves garlic – peeled and minced
- Salt and pepper – to taste
Instructions
- Wash the cucumbers and slice them in half lengthwise. Smash each half gently with the flat side of a knife, then cut into 1-inch pieces.
- Chop the avocado into bite-sized pieces and add it to the bowl with the smashed cucumbers.
- Stir in crumbled feta cheese, chopped pistachios, dill, salt, and pepper.
- In a separate jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.
- Pour the dressing over the cucumber mixture and toss gently to combine. Serve immediately.
