  • 4 Persian cucumbers (or 1 English cucumber)
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash the cucumbers and slice them in half lengthwise. Smash each half gently with the flat side of a knife, then cut into 1-inch pieces.
  2. Chop the avocado into bite-sized pieces and add it to the bowl with the smashed cucumbers.
  3. Stir in crumbled feta cheese, chopped pistachios, dill, salt, and pepper.
  4. In a separate jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.
  5. Pour the dressing over the cucumber mixture and toss gently to combine. Serve immediately.
