  • 1/3 cup mayo
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 12 tablespoons lime juice
  • 1/2 tablespoon garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup red onion, diced
  • 1/4 cup cotija cheese, crumbled
  • 4 cups rice of your choice, cooked
  • black beans
  • cherry tomatoes, halved
  • jalapeño slices
  • lime wedges
  • additional fresh cilantro leaves
  • sour cream
  • 12 avocado, sliced

Instructions

  1. Begin by preparing the marinade for the chicken. In a mixing bowl: Combine your marinade ingredients (if applicable). Add the chicken breasts to the bowl and ensure they are well-coated. Allow them to marinate for at least 15 minutes.
  2. While the chicken is marinating: Preheat your grill or grill pan over medium heat. Grill the corn until it’s charred on all sides; remove from heat. Next, grill the marinated chicken until cooked through (about 6-7 minutes per side).
  3. In another mixing bowl: Cut the grilled corn off the cob. Add mayo, feta cheese, cilantro, lime juice, garlic, chili powder, paprika, salt, pepper, red onion, and cotija cheese. Mix well until combined.
  4. To assemble: Place a scoop of cooked rice at the base of each bowl. Top with sliced grilled chicken and generous portions of street corn salad. Add toppings like black beans, cherry tomatoes, jalapeño slices, avocado slices, and lime wedges as desired.
