  • 1/4 cup (60 g) lemon juice (cold)
  • 1 lb sweet potatoes (about 2 medium)
  • 5 tablespoons (70 g) unsalted butter (softened to room temperature)
  • 1 cup (200 g) dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup (310 g) evaporated milk
  • 1 tablespoon (15 g) vanilla extract

Instructions

  1. Prepare the Pie Crust: In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until crumbly. Gradually add ice water and lemon juice until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Cook the Sweet Potatoes: Peel and chop sweet potatoes; boil in salted water for 15–20 minutes until tender. Drain and mash until smooth.
  3. Make the Filling: In another bowl, blend softened butter with dark brown sugar. Add eggs one at a time, followed by mashed sweet potatoes and spices. Mix in evaporated milk and vanilla until well combined.
  4. Assemble & Bake: Preheat oven to 350°F (175°C). Roll out dough into a circle larger than the pie dish; place in the dish and pour in the filling. Bake for about 90 minutes or until set.
  5. Cool & Serve: Allow to cool completely before slicing. Serve with whipped cream or your favorite toppings.
