  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped, optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water
  • 2 tablespoons masa harina
  • 1 tablespoon brown sugar

Instructions

  1. Prepare the chili paste by toasting the dried peppers, cooling, soaking them, and blending with salt and soaking water until smooth.
  2. Season cubed beef with cumin, salt, and pepper.
  3. Sear the beef in olive oil until browned, then set aside.
  4. Cook chopped onions and jalapenos in remaining oil until softened; add garlic for another minute.
  5. Return beef to pot, mix in chili paste, and simmer with beef stock, water, brown sugar, and masa harina for about two hours.
