Ingredients
- 113 g unsalted butter
- 200 g dark chocolate
- 100 g brown sugar
- 50 g granulated sugar
- 3 eggs
- 90 g all-purpose flour (sifted)
- A pinch of salt
- 1/2 tsp vanilla extract
- 2 shots espresso or instant coffee
- 250 g mascarpone cheese (room temperature)
- 240 ml heavy cream
- 50 g sugar (for topping)
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 tbsp espresso powder
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line an 8 or 9-inch baking tin with parchment paper.
- Melt chopped dark chocolate and unsalted butter in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Combine melted chocolate with brown and granulated sugars until mixed well.
- Add eggs, one at a time, whisking until fully incorporated.
- Sift in flour and salt; gently fold until just combined.
- Pour the batter into the prepared tin and bake for 25-30 minutes or until a toothpick comes out clean.
- After baking, poke holes in the brownies and pour espresso over them while still warm. Let cool completely before serving.
